🥕 easy vegetable soup


Hi Reader,

One of my goals is to produce less food waste.

And a strategy I'm finding works well is to go through the produce that's starting to go bad at the end of the week and turn in into a delicious soup.

My go-to recipe is this Vegan Vegetable Soup. It contains beans to make it hearty and filling, and it's easy to prepare with any veggies you have on hand.

I've also added leftover cooked rice or quinoa when I have it.

Anything goes when it comes to this easy soup!
