๐Ÿ… tomatoes and bread, 3 ways

Hi Reader,

Over the weekend I went to the farmers market and picked up some beautiful tomatoes and bread.

So naturally, Iโ€™m turning them into a full summer menu:

๐Ÿ… Tomato Avocado Toast for breakfast

๐Ÿ… Sourdough Panzanella for lunch

๐Ÿ… Spanish Gazpacho for dinner

Simple and exactly what I want to eat when tomatoes are at their best.

I hope you find one to add to your own summer menu this week.

Love and Veggies,

Amy

A bowl of Mediterranean penne with zucchini, tomatoes, and pine nuts.

Hi Reader, Now that zucchini is in season here in California, I've been experimenting with different ways to enjoy it. One of my favorites is a Mediterranean penne pasta. It features tender summer squash, sweet cherry tomatoes, and buttery pine nuts, along with garlic and balsamic for seasoning. And it's easy to make in 30 minutes!
