Hi Reader, Even though I live in sunny Southern California, it gets cold in the evenings, so lately I've been making warming soups and stews every night. One of my favorites is Italian-inspired Zucchini Stew with Potatoes. Zucchini seems to available at my local supermarkets year round now, so hopefully you can get it where you are, too. This stew is easy to make on the stove and is loaded with veggies. It's perfect on its own or with some warm crusty bread for dipping.
