😋 easy dinner idea


Hi Reader,

Last week, I put together an easy dinner on a whim.

It turned out to be so tasty that it's now going to be on regular rotation.

1️⃣ First I made some brown rice and stirred in a drizzle of extra virgin olive oil and dried herbs. Alternatively you can use your favorite grain, like quinoa, or even mashed or roasted potatoes.

2️⃣-3️⃣ I made my Sheet Pan Seasoned Roasted Chickpeas with carrots on the side. A green veg like green beans or asparagus would have been a great choice, too, but I only had carrots left in my fridge.

4️⃣ I served the rice, chickpeas, and carrots in shallow bowls and topped them with my Garlic and Herb Vegan Yogurt Sauce. It was the perfect finishing touch, and we all enjoyed our meal.
