🥵 when it's too hot to turn on the oven

Hi Reader,

The weather has been brutal this week here in Southern California.

So I’ve been skipping the oven and relying on my air fryer for just about everything, including dessert.

Since I thought it might be hot and humid where you are, too, I put together a collection of vegan air fryer recipes for when you don't want to turn on the oven.

And if you’re staying indoors like I am this weekend, it’s a great time to catch up on any episodes of Immune for Life you missed before the free screening ends Monday, August 31.

Love and Veggies,

Amy

Bowl of green pepper salad with tomatoes and green olives.

Hi Reader, Give green peppers the spotlight with my Mediterranean-inspired green pepper salad. It’s a delightful mix of crisp peppers, juicy tomatoes, briny green olives, and fresh parsley. Reader Jenna said, "Absolutely FANTASTIC! Added some chopped green onions, eliminated the oil since we are WFPBNO, and it is simply one of the best salads of the Summer!" Bowl of cherry tomato salsa surrounded by tortilla chips.

Hi Reader, I absolutely love cherry tomatoes. And while I use them in A LOT of recipes, one of my favorites is a simple, no-cook cherry tomato salsa. But it's not just for eating with tortilla chips and tacos. I love it on tofu scramble, roasted potatoes, rice pilaf, salad, and more.
