Hi Reader, When I am craving a cozy bowl of soup but don't want a long ingredient list, I go straight to this Mediterranean lentil soup. It's inspired by Greek fakes, uses mostly pantry staples, and gets its deep flavor from lentils and rich tomato paste. The best part is how you finish it. Right before serving, you drizzle each bowl with a little olive oil and red wine vinegar.
Love the mix of flavors especially adding red wine vinegar at the end. Yum! -- Freddi Fun fact: In some parts of the world, lentils are considered a good luck food for a prosperous new year, thanks to their coin-like shape.

You only need 4 ingredients plus salt and pepper, and everything cooks on one sheet pan in about 30 minutes. It is easy enough for a busy weeknight, but pretty enough for your holiday table.
