A colorful, festive, fruity salad is always welcome this time of year.

Here are a few of my favorites:

🥗 Mexican Christmas Salad: a delicious combination of lettuce, beets, and fruit served with a light orange vinaigrette.

🥗 Pomegranate, Apple, and Kale Salad: a gorgeous red and green dish with earthy walnuts.

🥗 Spinach Orange Salad: tender greens with pops of color and crunch from pomegranate, citrus, and pumpkin seeds.

Hi Reader, Last week, I put together an easy dinner on a whim.
