🎅 easy Christmas breakfast casserole


Hi Reader,

Do you know what you're making for breakfast Christmas morning?

One of my all-time favorites is Vegan Breakfast Casserole.

It's layered with flavorful tofu scramble, colorful sauteed veggies, and crispy tater tots.

It's been a tradition in my house for years, and happily many readers have told me it's become a tradition in their homes, too.

This dish is always a hit with guests (both vegan and non-vegan), and the leftovers taste even better the next day.

That's why I like making the casserole a day in advance and reheating it in the morning. (Plus I can sleep in a little longer.)
