🍅 creamy white bean skillet

Hi Reader,

This creamy white bean skillet with sun-dried tomatoes is made with mostly pantry staples and comes together in about 20 minutes.

The white beans are simmered with garlic and oregano, then finished with lemon juice, fresh basil, and a smooth cashew cream sauce.

Serve it with crusty bread for scooping up every last bit, or spoon it over rice, quinoa, or pasta.

It’s also the first recipe I photographed in my new kitchen, so I’m especially excited to share it with you! You can follow along on Instagram for behind-the-scenes peeks at the kitchen remodel.

Love and Veggies,

Amy
