Hi Reader, I spotted the most beautiful cherry tomatoes at the farmers market over the weekend, and they immediately made me think of this simple pasta. Angel hair pomodoro is made with fresh tomatoes, garlic, olive oil, and basil, so it’s perfect when summer tomatoes are at their best. The tomatoes cook down quickly in the skillet while the pasta boils, then everything gets tossed together with a little reserved pasta water. It’s fresh, simple, and ready in about 30 minutes.

Hi Reader, Summer is almost here, and I can't wait for our first dinner of the season cooked outside on the grill. I already know I'll be making teriyaki tofu skewers with fresh pineapple, sweet bell pepper, and red onion. They’re easy to prepare since the tofu only needs 15 minutes to marinate, and the homemade sauce takes just 10 minutes to whip up. Debbie said, "Yummy teriyaki sauce. It is great for veggies too." You can make it with the homemade tofu feta included in the recipe, or keep it easy with your favorite store-bought vegan feta, like Violife or Follow Your Heart.
