🥗 a more substantial Greek salad


Hi Reader,

Greek millet salad is loaded with cherry tomatoes, cucumber, red onion, Kalamata olives, and tangy vegan feta, then tossed in a zippy red wine vinaigrette.

It has all the bright, briny flavors of a classic Greek salad, but the millet makes it feel a little more substantial.

You can make it with the homemade tofu feta included in the recipe, or keep it easy with your favorite store-bought vegan feta, like Violife or Follow Your Heart.
