🎅 a Christmas morning favorite


Hi Reader,

Do you know what you’re making for breakfast on Christmas morning?

One of my all-time favorites is tofu scramble tater tot casserole, a cozy crowd-pleaser layered with savory tofu scramble, colorful sauteed veggies, and golden crispy tater tots.

It’s been a tradition in my house for years, and I love hearing from readers who’ve made it part of their holiday mornings, too.

This dish always wins over guests (vegan and non-vegan alike), and the leftovers are even better the next day.

That’s why I like to make it ahead, refrigerate it overnight, and simply reheat it in the morning... which means I get to sleep in a little longer.
