Hi Reader, While the days may be warming up, cooler nights have me craving warm and comforting foods. One of my current go-tos is Creamy Vegan Potato Corn Chowder. No dairy, no unusual ingredients. Just a cozy bowl of plant-based soup with tender potatoes, sweet corn, and a velvety cashew cream that will remind you of the chowders you grew up eating. And because not everyone has an Instant Pot, I spruced up the post to include stove-top instructions as well.

Hi Reader, Meet my current favorite 15-minute, no cook meal. A California-meets-Mediterranean mashup, Greek chickpea salad swaps out the feta for creamy cubes of avocado. In addition, it's loaded with juicy tomatoes, crisp cucumbers, and briny Kalamata olives, tossed together in a simple vinaigrette seasoned with dried oregano. I hope you enjoy it as much as I do Reader! Get the recipe for Greek Chickpea Salad with Avocado Love and Veggies, Amy

Then load up your pasta salad with your favorite veggies and chickpeas for a summery side dish...
