Hi Reader,

When the evening calls for something warm and satisfying, this Spanish-style Chickpea Tomato Stew with Spinach hits the spot.

Chickpeas simmer in a smoky tomato broth with tomato paste, cumin, and smoked paprika, then fresh baby spinach goes in at the end.

It’s simple, hearty, and on the table in about 35 minutes.

Serve it with crusty bread or spoon it over rice or quinoa. I love it either way, especially on a chilly night.
