Hi Reader, This roasted chickpea ratatouille casserole is basically the best of late summer/early fall produce, all in one dish. It’s made with zucchini, eggplant, red bell pepper, fresh tomatoes, garlic, and canned chickpeas, then baked together in one casserole dish.
